"Ce concours va bien au-delà des enjeux des ressources de la mer car il porte également sur l’ensemble des enjeux de l’alimentation tels que le gaspillage des ressources (animales et végétales) et de l’énergie, la réduction de l’usage du plastique... tous ces enjeux sociétaux qu’il est urgent de prendre en compte dans les restaurants et qui sont formidablement bien intégrés par ces jeunes qui deviennent de fabuleux ambassadeurs pour notre belle planète."
